Recipe: Mango Guacamole

It’s starting to feel a lot more like summer out. I was going to name this post ‘Habanero Redemption’ as I made jerk chicken last night using some fresh habanero peppers. Why redemption? Because the last time I attempted to use them I ended up in a shower, blind, with hives down my face and neck. I wear gloves now.

So what do you serve at summer parties? Something colorful, delicious, and downright summery.  I whipped up some mango guacamole the other night and it honestly was amazing. The green avocado, yellow mango, leafy cilantro and red chili pepper make a playful flavor packed dish you can't stop eating. Please make this and prepare to wow your friends.



Mango Guacamole
serves 4-6

3 avocados
1 champagne (ataulfo) mango, cubed
1 small white or yellow onion, diced
1 bunch of cilantro, roughly chopped
4 garlic cloves, finely chopped
1 lime, juiced
1 fresno chili pepper, chopped
salt & pepper to taste

I cut the avocados in half, remove the seed, score and scoop out with a spoon. I then add the avocado and the ingredients listed above in a mixing bowl and mash/mix together with a fork. I prefer a chunkier guacamole as I find I like the texture more. You can remove the veins and seeds in the chili pepper if you prefer less heat, but I like it spicy and the seeds left in is the perfect amount of heat in my house.
