Recipe: Grilled Spicy Pineapple

I know the rest of the country is scorching right now but we are stuck in the 60's with rain. So with sun coming for the weekend please get outside, enjoy the sunshine, and get behind your grill and make some food.

Ever find yourself looking for something easy to serve as a side dish off the grill? This happens to me all the time.  Recently at the grocery store I stared down a fresh pineapple and thought…”You are coming home with me!” I added some spice and let the grill start to caramelize the natural sugars in the pineapple and it made for a tasty side dish or passed appetizer. Next time you find yourself at the grocery store and you see that pineapple, just do it.


Grilled Spicy Pineapple
serves 4-6

1 fresh pineapple
paprika, dusting
cayenne powder, dusting
salt, pinch of

Cut the sides of the pineapple off and slice it into rounds. Add your spices on each round; flip and repeat on second side. I used habanero powder for extra heat, but cayenne is perfect for not trying to hurt your unsuspecting neighbors. Once you get them all spiced up, place them on a hot grill for 3-5 minutes on each side. They should have some serious grill marks with some blackening of the sugars just starting to happen between the marks. Remove from grill and slice off 3 sides per round. You should be left with a triangle shaped core to be thrown out. Plate, serve and enjoy.
